Description

Polyglycerol-2 stearate is much better than that of monoglycerol fatty acid ester, because polyglycerol-2 stearate has more There are many hydrophilic hydroxyl groups, and its hydrophilicity increases with the increase of glycerol polymerization degree. The lipophilicity of polyglycerol-2 stearate emulsifier varies with fatty acid alkyl groups. Therefore, by changing the glycerol polymerization degree , fatty acid types and esterification degrees, a series of HLB values (1-20) can be obtained.

Chemical Properties

Dipolyglycerol monostearate is yellow semi-solid waxy, strong acid resistance, insoluble in water, dispersible in water, soluble in organic solvents such as ethanol and oil saponification value 91mg/kgKOH/g, hydroxyl value 457, HLB value 11.3. Good hydrophilic performance, it has a unique emulsification and stabilization effect under the acidic condition of 120 °C.

Uses

Polyglyceryl-2 Monostearate can be used for lactic acid bacteria beverages, vegetable protein beverages, ice cream, ice cream, popsicles, potato chips, fried snacks and starch and seasonings for fried snacks, the maximum use amount is 10g /kg.
