Ferric peptonate is a compound of ferric oxide and peptone of undetermined structure. It contains 16 to 18% iron in nonionic form. It is made water-soluble by the addition of sodium citrate. It is listed in the 1987 NAS food additives survey, but no technical effect (food functionality) or amounts added to food are given.
