定義
本品は、炭酸のモノアンモニウム塩であり、次の化学式で表される。
性質
加熱により分解されると、と二酸化炭素および水が生成します。また、炭酸水素アンモニウム自体は不燃性ですが、分解物のアンモニアガスは引火性であるため注意が必要です。
水酸化ナトリウムなどの強塩基と混触するとアンモニアガスを生じ、酸と激しく反応することで炭酸ガスを発生します。また、食品添加物のバニリンや糖類 (特に単糖) などアルデヒド基を有する物質と混触することで、炭酸水素アンモニウムに含まれるアンモニアが反応して着色するという性質があります。
炭酸水素アンモニウムは、国際化学物質安全性カードに収録されています。吸入すると咳や咽頭痛を憶えたり、目に入ることで発赤や痛みを感じたりするため大変危険です。さらに、皮膚への刺激性もあると報告されています。そのため、カラートリートメントとして使用する際に頭皮に刺激を感じるようであれば、炭酸水素アンモニウムが含まれていないカラートリートメントを選んだ方が無難です。
溶解性
水に可溶 (17.4g/100g, 20℃)。エタノール, アセトンに不溶。水に溶けやすく、エタノール及びアセトンにほとんど溶けない。
解説
NH4HCO3(79.06)．濃アンモニア水に冷却しながら二酸化炭素を十分に作用させ，二酸化炭素の加圧下で放置すると得られる．炭酸水素アンモニウムは，無色の柱状晶．密度1.57 g cm－3．室温では安定で，ゆっくり加熱すると60 ℃ で二酸化炭素，アンモニア，および水とに分解し，急速に加熱すると107.5 ℃ で融解する．水に可溶，アセトン，エタノールに不溶．各種アンモニウム塩，染料，肥料などの原料に用いられる．分解しやすいことを利用して，ベーキングパウダー，泡消火剤，多孔質プラスチック，セラミックスの製造にも利用される．森北出版「化学辞典（第2版）

Ammonium bicarbonate is a white crystalline solid with a faint ammonia odor and soluble in water but insoluble in alcohol and acetone. It decomposes above 35℃ to ammonia, carbon dioxide and water vapor, releasing irritant fumes. Only 30% of the applied nitrogen of this fertilizer is recovered by plants owing to the unstable nature of ammonium bicarbonate. that forms by the reaction of anunonium hydroxide and excess CO2.

Breathing Ammonium Bicarbonate can irritate the nose, throat, and lungs causing coughing, wheezing, and/or shortness of breath. No risks to humans are expected from approved uses of ammonium bicarbonate as a pesticide active ingredient. The substance is approved as a food additive by the Food and Drug Administration (FDA) and as an inert pesticide ingredient by EPA. No toxic endpoints have been identified.

炭酸水素アンモニウムは、古くから欧米や中国でベーキングパウダー (膨張剤) として用いられてきました。日本では重曹の方がベーキングパウダーとして馴染みがありますが、炭酸水素アンモニウムはサクサクとした食感を与えるといった特徴があり、主に業務用として用いられています。また、より低温で膨張しやすいという特徴を活かし、光熱費の削減を目的としてお菓子に使用される場合も多いです。
炭酸水素アンモニウムは、多くのカラートリートメントにpH調整剤として配合されています。酸性が強くなるほど髪のキューティクルが閉じてしまうため、染毛料が入りにくくなることがあります。その際に、炭酸水素アンモニウムで髪を一時的に弱アルカリ性にすることで、キューティクルを少し開かせ、染料が浸透しやすくしています。
その他、食品加工用途や咳止めシロップ、制酸剤も用途の1つです。化学実験でのpH緩衝液 (バッファー) や試薬、工業用途では肥料、染料、医薬品、触媒、セラミック、難燃剤、プラスチックの製造等に使用されています。
使用と保管
- 直射日光を避け、換気のよいなるべく涼しい場所に保管する。
- ガラス、ポリエチレン、ポリプロピレン製の容器での保存を推奨する。
- 強酸との混触を避ける。
- やや吸湿性があるため、容器を密閉して保管する。
- 湿気、水、高温体との接触を避ける。
- 35℃以上で分解が生じやすいため、25℃以下で保管する。
- 火災によってアンモニアや一酸化炭素などの有害ガスが発生するおそれがあるため、扱いには十分に注意する。
