에리트로신 B C화학적 특성, 용도, 생산

순도시험

  (1) 물불용물 : 색소시험법 중 물불용물 시험을 할 때, 그 양은 0.2% 이하이어야 한다.

  (2) 액성 : 이 품목의 수용액(1→100)의 pH는 6.5～10.0이어야 한다.

  (3) 염화물 및 황산염 : 색소시험법 중 염화물 및 황산염의 시험을 할 때, 그 총량은 2% 이하이어야 한다.

  (4) 비소 : 이 품목을 비소시험법에 따라 시험할 때, 그 양은 4.0ppm 이하이어야 한다.

  (5) 아연 : 이 품목을 색소시험법 중 중금속 (1)에 따라 시험할 때, 그 양은 50ppm 이하이어야 한다. 다만, 시험용액 10mL 및 공시험용액 10mL를 취한다.

  (6) 납 : 이 품목 5.0g을 취하여 원자흡광광도법 또는 유도결합플라즈마발광광도법에 따라 시험할 때, 그 양은 2.0ppm 이하이어야 한다.

  (7) 카드뮴 : 이 품목 5.0g을 취하여 원자흡광광도법 또는 유도결합플라즈마발광광도법에 따라 시험할 때, 그 양은 1.0ppm 이하이어야 한다.

  (8) 수은 : 이 품목을 수은시험법에 따라 시험할 때, 그 양은 1.0ppm 이하이어야 한다.

  (9) 기타의 색소 : 「식용색소녹색제3호」의 순도시험 (9)에 따라 시험한다. 다만, 전개용용매는 25% 에탄올․5% 암모니아용액의 혼액(1 : 1)을 쓴다.

확인시험

  (1) 이 품목 0.1g을 물 100mL에 녹이면 청색을 띤 적색을 나타낸다.

  (2) 이 품목 0.1g을 0.02N 초산암모늄용액 500mL에 녹이고 그 중 3mL에 0.02N 초산암모늄용액을 가하여 200mL로 한 액은 파장 526±2nm에 극대흡수부가 있다.

  (3) 이 품목의 수용액(1→1,000) 5mL에 염산 1mL를 가하면 침전이 생긴다.

  (4) 이 품목 0.1g을 황산 10mL에 녹이면 황갈색을 나타내고 이 액 2～3방울을 물 5mL에 가하면 등적색의 침전이 생긴다.

정량법

  이 품목 약 1g을 정밀히 달아 물에 녹여 100mL로 하고 그 중 50mL를 시험용액으로 하여 색소시험법 중 정량법 (2) 중량법에 따라 시험한다.

FD & C Red No. 3 is principally the disodium salt of the monohydrate of 9(ocarboxyphenyl)-6-hydroxy-2,4,5,7-tetraiodo-3H- xanthen-3-one.
The colorant is a brown powder that dissolves in water to give a solution red at neutrality, with a yellow-brown precipitate in acid, and with a red precipitate in base. When dissolved in concentrated sulfuric acid, it yields a brown-yellow solution that evolves iodine and a precipitate of the free acid when heated.
FD & C Red No. 3 is used in dietary supplements, confectionery products, dairy products, cherries, jellies, jams, dessert powders, canned fruit and vegetable products, fish products, condiment sauces and bakery goods.1 .

용도

Erythrosin B (FD&C Red #3) is a colorant. It is not recommended for use below ph 5.0, being insoluble at ph 3–5 but being stable at ph 7 and 8. It has a solubility in water of 9 g/100 ml at 25°c. It has fair stability to oxidation and poor to fair stability to light, while having good stability in 10% sugar systems. It has exceptional clarity and brilliance, having a bluish pink hue with very good tinctorial strength. It has poor compatibility with food components and is used in candies and confections as well as cherry dyeing. The common name is erythrosine.
