계피산메틸 C화학적 특성, 용도, 생산
순도시험
(1) 응고점 : 이 품목의 응고점은 33.8℃이상이어야 한다.
(2) 용상 : 이 품목 1g에 80% 에탄올 4mL를 넣고 40℃로 가온하여 녹일 때, 그 액은 거의 징명하여야 한다.
(3) 산가 : 이 품목의 산가는 향료시험법 중 산가측정법에 따라 시험할 때, 2 이하이어야 한다.
확인시험
이 품목 1g에 10% 알콜성수산화칼륨용액 10mL를 넣어 수욕 중에서 가열하면 녹아서 백색침전이 생기고 특이한 향기는 없어진다. 따뜻할 때 이에 물 10mL를 넣으면 침전은 녹고 이 액을 묽은황산으로 산성화하면 백색의 결정성 침전이 생긴다.
정량법
이 품목 약 1g을 정밀히 달아 향료시험법 중 에스테르가 및 에스테르함량측정법에 따라 시험한다. 다만, 가열 전에 물 5mL를 넣는다.

개요
Methyl cinnamate is the methyl ester of cinnamic acid and is a white or transparent solid with a strong, aromatic odor. It is found naturally in a variety of plants, including in fruits, like strawberry, and some culinary spices, such as Sichuan pepper and some varieties of basil. Eucalyptus olida has the highest known concentrations of methyl cinnamate (98 %) with a 2 - 6 % fresh weight yield in the leaf and twigs.Methyl cinnamate is used in the flavor and perfume industries. The flavor is fruity and strawberry-like; and the odor is sweet, balsamic with fruity odor, reminiscent of cinnamon and strawberry.
It is known to attract males of various orchid bees, such as Aglae caerulea.
Methyl cinnamate crystals extracted using steam distillation from Eucalyptus olida.
