| CINNAMALDEHYDE DIETHYL ACETAL Usage And Synthesis |
Aroma | Faint, but fresh-green, slightly spicy, oily-sweet odor. Taste is mild and oily-sweet, not
nearly as sweet as the aldehyde. | Physical properties | Almost colorless oily liquid. B.P. 251°C. (very close to that of Cinnamic aldehyde). Sp.Gr. 0.98. Practically insoluble in water, soluble in alcohol and oils. | Uses | CINNAMALDEHYDE DIETHYL ACETAL is used occasionally in perfume formulations as a modifier and "new" note in modern-aldehydic or spicy-fruity fragrance types. Stable in soap, but does not contribute much
"spice" odor and can not be considered a suitable substitute for the aldehyde. | Preparation | Cinnamaldehyde diethyl acetal is prepared by using cinnamaldehyde and triethyl orthoformate as raw materials, adding p-toluenesulfonic acid in absolute ethanol, and then heating and refluxing. |
