Magnesium laurate is soluble in water, it is used as binder, emulsifier, and anticaking agent in foods.
[Chemical Properties]

Magnesium laurate, also known as magnesium dodecanoate, is a white solid that appears as a powder or in small lumps. It has a melting point of approximately 150.4 °C, is slightly soluble in water (solubility < 0.054 g/100 ml), and is soluble in ethanol. It is formed by the combination of two dodecanoate groups with a magnesium ion.
[Preparation]

Magnesium laurate is prepared by reacting sodium laurate with a solution of magnesium sulphate, and is primarily used as an emulsifier.
