[Chemical Properties] (E)-2-Hexenyl valerate has a ripe apple, pear, fruity-wine odor
[Uses] (E)-2-Hexenyl valerate gives power and richness to the conventional esters used in such flavors, and it lends the much desired creamy-buttery note to Rum flavor, although it is by no means a key ingredient.
[Definition] ChEBI:2-Hexenyl valerate is a fatty acid ester.
[Preparation] trans-2-Hexenyl valerate is produced by direct estcrification of trans-2- Hexenol with (iso-)Valeric acid, preferably under azeotropic conditions.
[Aroma threshold values] Aroma characteristics at 1.0%: green, estry, fruity, apple, green banana and pineapple with slight cognac and winey nuances.
