White crystalline powder. Sweet, approximately 2000 times sweeter than sucrose; flavor similar to sucrose, with no bitter or metallic aftertaste. Sweetness develops quickly, with a slight lingering sweetness. Odorless or with a characteristic slight odor. Non-hygroscopic. Soluble in ethanol (61%), glycerol (53.7%), methanol (41.9%), and water (13.1%), and slightly soluble in chloroform. Excellent heat resistance, acid and alkali resistance. |
