순도시험

  (1) 비소 : 이 품목을 비소시험법에 따라 시험할 때, 그 양은 4.0ppm 이하이어야 한다.

  (2) 납 : 이 품목 5.0g을 취하여 원자흡광광도법 또는 유도결합플라즈마발광광도법에 따라 시험할 때, 그 양은 2.0ppm 이하이어야 한다. 

  (3) 이산화황 : 이 품목 약 1g을 정밀히 달아 아래 그림과 같은 와그너튜브가 연결된 증류플라스크에 넣고 물 100mL와 인산(2→7) 25mL를 가하여 증류한다. 수기에는 미리 초산납용액(1→50) 25mL를 넣어주고, 냉각기의 하단이 이 액에 잠기도록 한다. 수기내에 액량이 약 100mL가 될 때까지 증류한 후 냉각기의 하단을 소량의 물로 씻고 염산 5mL와 전분시액 1mL를 가한 다음 0.01N 요오드용액으로 적정할 때, 그 양은 1 색가
에 대하여 0.005% 이하이어야 한다. 따로 같은 방법으로 공시험을 한다.

확인시험

  (1) 이 품목의 색가항에서 얻은 시험용액은 적색을 나타내며, 파장 525nm 부근에 극대흡수부가 있다.

  (2) (1)의 시험용액에 수산화나트륨시액을 가해서 알칼리성으로 하면 액의 색은 암록색으로 변한다.

정의

  이 품목은 포도과 포도(Vitis labrusca Linné 또는 Vitis vinifera Linné)의 과피를 물로 추출하여 얻어진 색소로서 안토시아닌(anthocyanin)을 주성분으로 하는 것이다. 다만, 색가조정, 품질보존 등을 위하여 희석제, 안정제 및 용제 등을 첨가할 수 있다.

개요

Grape skin extract is a red to purple powder or liquid concentrate prepared by aqueous extraction of grape marc remaining from the pressing of grapes to obtain juice. Extraction is effected with water containing sulfur dioxide. After concentration by vacuum evaporation, the sugar content is reduced by fermentation; further concentration removes most of the alcohol. The primary color components are anthocyanins such as the glucosides of malvidin, peonidin, petunidin, delphinidin, or cyanidin. Other components naturally present are sugars, tartrates, malates, tannins, and minerals. Alcohol or sulfur dioxide may be added. The powder may contain an added carrier such as maltodextrin, modified starch, or gum. In acid solution, grape skin extract is red; in neutral to alkaline solution, it is violet to blue.
The principal color matters are anthocyanin glucosides of anthocyanidins (2 -phenylbenzopyrylium salts) such as peonidin, malvidin, delphinidin and petunidin. (See also ANTHOCYANIN(S).).
Grape skin extract is used for coloring still and carbonated drinks and ades, beverage bases and alcoholic beverages, subject to specified restrictions.

용도

Grape Skin Extract is a natural red colorant with a high concentra- tion of red anthocyanic pigments which provide its physicochemi- cal properties. these pigments are responsible for the red, purple, violet, and blue hues of flowers and fruits. it is prepared by aqueous extraction of the fresh seedless marc remaining after the grapes have been pressed in the production of grape juice and wine. it contains the common components of grape juice, but in different propor- tions. the color depends upon the medium and the ph. in an acid medium and up to ph 4.5–5.5, the color is violet and becomes blue at ph 6.5. it has excellent water solubility and fair heat, light, and chemical stability. it can be used in soft drinks at 0.2–0.4%, and in candies at 0.5–1.5%.
