| 外観 | 白色～うすい黄色粉末～結晶 | | 解説 | クロロゲン酸化学式 C16H18O9 。水から結晶させると1/2分子の結晶水を含む無色針状晶として得られる。 110℃で脱水して無水物となり，208℃で溶融する。酸で加水分解するとキナ酸とコーヒー酸 (3，4-ジヒドロキシケイ皮酸) が生成する。クロロゲン酸タンニン系の苦味をもつ物質。コーヒーの実、サツマイモ、リンゴ、ゴボウなどに含まれる。とくにコーヒーの実の中に多く、低品位のものほどクロロゲン酸含有量が多く、不快な苦味をもつようになる。クロロゲン酸は、空気中の酸素により酸化しやすく、出しておいたコーヒーを長時間放置すると、クロロゲン酸の酸化によって、不快な味になりやすい。未熟のコーヒー豆に多量に存在し，タバコ，ナシ，チャの葉，サツマイモの塊根，リンゴの果肉など，広く双子葉植物の組織に分布している。植物の切り口が褐色化する原因になる物質の一つである。 | | 用途 | クロロゲン酸（クロロゲンさん、chlorogenic acid）は、3-カフェオイルキナ酸 (3-caffeoylquinic acid) とも呼ばれ、コーヒー酸のカルボキシル基がキナ酸3位のヒドロキシ基と脱水縮合した構造を持つ化合物である。鉄(III) イオンの存在下で緑がかった黒色の化合物となる。アルカリ条件下で橙色を呈する。ラジカル捕捉能を持つため、抗酸化作用が期待されている。
