It functions as a binder, emulsifier, and anticaking agent. | | Definition | ChEBI: An organic sodium salt resulting from the replacement of the proton from the carboxy group of dodecanoic acid by a sodium ion. | | Purification Methods | Neutralise it by adding a slight excess of dodecanoic acid and removing it by ether extraction.
