In winemaking, the glutathione content in must (such as Glutathione, Oxidized), as the primary ingredient in wine, determines the browning or caramelization effect during white wine production. The concentration of glutathione in wine is determined using UPLC-MRM mass spectrometry. Glutathione is also commonly found in cosmetics, particularly in oral skin-whitening drugs. It may also be used in creams, but as of 2019, its effectiveness remains unclear. |
