A solution of glucose and piperidine in ethanol was refluxed under argon atmosphere. Acetic acid was added and the mixture was further heated. The concentrated reaction solution was diluted with water, and the γ-pyranone was extracted with EtOAc. The crude product was purified by column chromatography (silica gel) and high-vacuum distillation. Finally, the product was recrystallized from hexane to give the title compound 2,3-dihydro-3,5-dihydroxy-6-methyl-4(H)-pyran-4-one. The synthetic route is shown in Figure 2.
