The main ingredients are capsanthin and capsorubin. It comes in an orange-red viscous liquid, paste, or powder with a chili odor, but without a spicy taste. It is soluble in organic solvents such as oils and ethanol, and exhibits an orange-red to orange-red color when dissolved in oil. It is insoluble in water. It has excellent emulsification and dispersibility, heat resistance, and acid resistance, but slightly poor light resistance. It is stable to metal ions and exhibits strong tinting power. Its maximum absorption wavelength in acetone is 470nm. The oral LD50 in mice is >1.7g/kg. Extracted from red peppers, it is highly safe. | [Uses]

Capsanthin is the major colouring compounds contained in the Paprika oleoresin, which is a kind of oil-soluble extract isolated from the fruits Capsicum annuum or Capsicum frutescens, and is a colouring and/or flavouring in food products. As a pink pigment, Capsanthin is very abundant in peppers, accounting for 60% of the proportions of all flavonoids in the peppers.
