Aluminum Sulfate is a starch modifier and firming agent. The anhydrous form has a slow rate of solution while the hydrate form has a solubility of 1 g in approximately 2 ml of water and a 1% solution ph of approximately 3.5. It is used up to 2% in combination with not more than 2% of 1-octenyl succinic anhydride.
