α-Amylase is used to hydrolyze α bonds of α-linked polysaccharides, such as starch and glycogen. α-Amylase has been used in various plant studies, such as metabolism studies in Arabidopsis 1 . Gaofeng amylase is a mixture of digestive enzymes extracted from a culture broth of Aspergillus oryzae. It is a yellow-white powder that forms a turbid solution in water and is nearly insoluble in ether. It readily absorbs moisture and has a slight odor. Its saccharifying power weakens with prolonged storage, and its saccharifying power is lost when the solution is heated to above 85°C. Its saccharifying power also weakens in the presence of acid or alkali. It not only hydrolyzes starch but also digests protein and fat. Its starch hydrolysis capacity is 1.5-2.0 times that of malt starch enzyme. Its optimal pH is 4-6, and its activity is unaffected by black tea, green tea, coffee, etc. | [General Description]
