Phosphatidylethanolamine is abundant in brain tissue, hence its name, cephalin. It coexists with lecithin in various tissues and organs of the body. Its structure and physicochemical properties are similar to those of lecithin, except that in cephalin, cholestylazoline is bound to phosphate. This product is a complex glycerophospholipid extracted from the brain and spinal cord of livestock. It is a slightly yellowish amorphous powder with a distinctive odor. It has no definite melting point and is optically active. It is soluble in petroleum ether, chloroform, ether, and methanol, slightly soluble in benzene and carbon tetrachloride, and insoluble in water. It is hygroscopic and readily oxidizes to a brown-black color in air. It is an amphoteric compound. | [Uses]

Phosphatidylethanolamine (375 mg/kg; i.p.) significantly inhibits food intake and locomotor activity in mice[4].
Phosphatidylethanolamine (2 g added to the basal diet containing 8 g of soybean oil; p.o.; dietary administration; ad libitum; 15-18 days) causes a decrease in serum cholesterol, phospholipid, apolipoprotein A-I (apoA-I) and apoE, an increase in high molecular weight apoB, alters the distribution of hepatic phospholipids and the fatty acid composition of serum and hepatic phospholipids in rats[6].
