Fish surimi processing by-products are minced and defatted with petroleum ether to obtain fish surimi slurry. The slurry is then hydrolyzed with 0.1% papain, and the supernatant (i.e., fish hydrolysate peptone solution) is collected by centrifugation. The supernatant is then desalted and concentrated through a 300 Da nanofiltration membrane and spray-dried to obtain a light yellow powder, i.e., Peptone,fish powder. |
