| 定義 | 本品は、フルクトース(*)のホモポリマーである。参照表示名称：フルクトース | | 解説 | D-フルクトフラノースからなる多糖．多くの植物の抽出液や枯草菌，Bacillus属，Xanthomonas属，Pseudomonas属など多数の菌のショ糖培養液に含まれる多糖．植物から抽出されたものは20～30個の(2β→6)-フルクトフラノースの直鎖状多糖であり，微生物からのものは，(2β→6)結合の直鎖にフルクトース残基約12個につき1個の(2→1)結合の分枝鎖をもち，分子量は約7×106 である．Bacillus subtilisあるいはAcetobacter levanicum中では，レバンスクラーゼの作用によってショ糖から生合成される．ハプテンとして用いられる． "
