Introduction:
Pullulan is a kind of extracellular water-soluble mucous polysaccharde similar to glucan and xanthangum produced by the fermentation of Aureobasidium pullulans. lt was produced by R. A specialmicrobial polysaccharide discovered . The polysaccharide has two important characteristics.structurally flexible and relatively high solubility. Pullulan has strong film-forming properties, gas barrierproperties, plasticity and viscosity, and has excellent properties such as being easily soluble in water.non-toxic and harmless, coloress and tasteless.

Application:
1. Food quality improver and thickener.
2.Water-soluble packaging materials used to prevent oxidation.
3.Low-calorie food raw materials for staple foods and pastries
Thickener, stabilizer, coating agent, quality improver. Generally used in combination with carrageenanand locust bean gum, the dosage is 0.15%~0.5%
