In a 250 mL round-bottom flask, isoleucine (15 g, 114 mmol) and acetic anhydride (31 g, 304 mmol) were mixed in methanol (50 mL) to give a white suspension. After stirring under reflux for 5.5 hours, the reaction mixture was concentrated under reduced pressure. Recrystallization from ethanol gave 13.3 g of white crystals.
