Calcium sorbate inhibits the growth of various types of micro-organisms
including many pathogenic and non-pathogenic types of bacteria. It is
effective in inhibiting the growth of such pathogenic microorganisms as
Salmonella, Staphylococcus and certain Streptococcus. It works by releasing active sorbic acid in aqueous environments to disrupt the metabolism and cell membranes of yeasts, molds, and fungi. |
