外观性状系葡萄糖、鼠李糖和柚配质的复合体。白色至浅黄色结晶性粉末,在水中结晶者,为含6~8个结晶水的结晶体,熔点83℃。在110℃下干燥后可得含2个结晶水的物质,熔点171℃。极苦,用水稀释5万倍后仍有苦感。在常温水中的溶解度为0.1%,75℃时为10%。溶于丙酮、乙醇、温醋酸和氢氧化钠液。经水解加氢后所得“柚苷二氢查耳酮”为甜味剂,甜度约为蔗糖的150倍。

双氢黄酮类化合物
柚皮苷是一种双氢黄酮类化合物。由于A环和B环之间完全没有共轭,所以在282nm有强烈的紫外吸收峰,使柚皮苷显示多种生物学活性和药理作用,柚皮苷能够显著改善局部微循环和营养供给,有效抵抗黑眼圈,尽显明亮双眼。并且研究表明,柚皮苷对黑色素细胞的增殖和迁移均具有抑制作用,以此对抗色素沉着造成的色素黑眼圈。提取纯化得到的柚皮苷是白色至浅黄色结晶性粉末, 味极苦,经水解加氢后得到甜度是蔗糖150倍的柚皮苷二氢查耳酮。柚皮苷在常温水中的溶解度只有0.1%,在75℃时溶解度能提高到10%,易溶于甲醇、乙醇、丙酮、热醋酸、稀碱溶液、甲酰胺,不溶于石油醚、苯、乙醚和氯仿等非极性溶剂。
